When you select a color for a Calendar Block, that color appears wherever the block is shown, regardless of the calendar's "color by" setting. When no color is selected, the block uses the option selected in "color by," such as provider or appointment type. Clear the selected color to return to automatic coloring. This rule applies to recurring blocks and scheduled appointment blocks as well.
